Director, Food and Beverage – Atlantis The RoyalJob SummaryThis role is a strategic business leader responsbile for overseeing assigned venues within the F&B operation. Where applicable the position oversees the development and implementation of departmental strategies and ensures implementation of the brand service strategy and brand initiatives. The position ensures the food and beverage operation meets the brand s target customer needs, ensures employee satisfaction, and focuses on growing revenues and maximizing the financial performance of the department. Develops and implements property-wide strategies that deliver products and services to meet or exceed the needs and expectations of the brand s target customer and property employees and provides a return on investment.Key Duties and Responsibilities• Create and develop concepts for new outlets during the pre-opening.• Establish and hire the F&B pre-opening teams.• Work with Brand Partners to review and establish standards, staffing levels, recruitment strategy, alignment with hotel policies and SOPs, etc.• Ensure that each food and beverage outlet is managed successfully as an independent profit center.• Coordinate the formulation of the Annual Operating Budget in determining outlet projected revenues and expenses, operating equipment and FF&E requirements in line with the compilation of the Annual Business Plan.• Ensure that the Department Operational Budgets are strictly adhered to• Monitor service and food and beverage standards in all outlets.• Handle all guest complaints, requests and enquiries on food, beverage and service.• Attend or conduct daily operations briefings with the outlet managers in the absence of the Vice President, Food & Beverage• Manage, train and develop the Food and Beverage leadership team.• Monitor and constantly improve quality and guest satisfaction with the given tools (LQA, IFH Mystery Shopper, Tripadvisor, Lobster Ink, etc.)• Ensure all rules & regulations are strictly established and adhered to within the hotel including hotel s policy on fire and safety as well as hygiene regulations and all ISO Standards.• Complete market research on competitors twice a year and complete a report for each competitor visit• Complete menu engineering for all outlets as per SOP• Ensure that all operating systems are well maintained and audited quarterly (Symphony, SOP s, restaurant reservations system)• Collaborate with the Training and Outlet Managers to develop and implement effective training programs.• Foster innovation and implement the same in the department to drive sales to full potential.• Recruit and select Food and Beverage Heads of Department who are able to work within the decentralized management philosophy Support and implement new recruitment initiatives to identify internal and external talent.• Establish a rapport with guests maintaining good customer relationship.• Any other duties as assigned by the Vice President, Food & Beverage from time to time.Skills, Experience & Educational Requirements• 10 years+ experience in Food and Beverage Management• Minimum of 3 years experience in a similar role in a luxury hotel• Management experience in complex Food and Beverage operations• International experience preferred.• Must be an exceptional leader and business driven, with innovation and creative skills.• Prior experience in managing food & beverage costs and inventory control.
